Here is a great salad that tastes great… and you will go back for seconds.
Low in fat, high in fiber, high in antioxidants, and full of great flavour, what more could you ask.
This is one of my favorite recipes.
2 – Large Organic Eggplants – Sliced and Grilled or Baked with some Garlic Powder and just a little salt. Spray with a little oil of your choice – just enough to make the your seasoning stick.
2 – Cups of Organic Celery – Chopped
1 – Large Organic Tomato – Chopped
2 – Cups Organic Sugar Snap Peas – Chopped
1 – Cup Organic Red Onion – Chopped
1/4 – Cup of Balsamic Vinegar
4 – Tablespoons of Honey
1 – Tablespoon of Organic Garlic Powder (Or you can used fresh garlic if you want)
Salt and Pepper to Taste
Mix everything together and you are ready to serve.
