This is one of my favorite Whole Foods/Plant Based recipes, and it usually includes cleaning out the frig of everything that needs to be used up for the week.
And it’s very nutritious and has lot of energy for the winter… a wonderful comfort food.
You can vary the ingredients as you like… use whatever you have in the frig that needs to be used up.
Here is what I used.
2 – Cups of Organic Winter Squash, cut up into large chunks, you can leave the skin on if you like.
2 – Cups of chopped Organic Red Bell Pepper
1 – Large Organic Onion Chopped
2 – Cups of Organic Celery Chopped
2 – Cups of Taro Root Chopped – Could use potato instead
1 – Cup of Chopped Organic Mustard Greens
1/4 – Cup of fresh Organic Oregano Leaves Minced
4 – Cloves of Garlic Minced
1/4 – Cup of Minced Basil
1/2 – Large Box of Organic Whole Grain Rice Pasta – Any type will work
1 – Package of Vegan Sausage of your choice – Sliced.
Salt and Pepper to taste – will need some salt, but use sparingly.
Enough low sodium veggie broth to cover everything plus about 32 oz more… will need this for the pasta.
Put everything in a large pot except the pasta, sausage, and mustard greens and simmer for 2 hours… this is a slow cook recipe.
Now you can take out some of the winter squash and put it into a blender to liquify and then add it back into the pot to give it that nice yellow color.
Next add the pasta and sausage and cook on high until the pasta is done… usually 10 to 12 minutes.
Turn off the heat, the pasta will absorb most of the excess veggie broth… and leave you with a very thick soup, then add your mustard greens into the hot broth.
And this is easy to clean up, because you only used one pot.
Brown Rice compared to White Rice has a lot of health benefits. Brown Rice is full of Thiamine, Niacin, Pyridoxine, Vitamin K, Calcium, Iron, Phosphorus, and Potassium. Brown Rice is rich in fiber, controls blood sugar and cholesterol, and works wonders for ulcers and diarrhea. Plus if you are debilitated it’s very easy to digest and contains needed nutrients for your bones, muscles, nails, hair, and teeth.
Winter Squash works wonders for staving off disease because they are packed full of lots of great antioxidants that protect you from colds, flues, cardiovascular disease, strokes, and even cancer. One cup of Winter Squash will give you over 18,000 micrograms of Beta Carotenoids a powerful antioxidant.
Winter Squash contains Cucurbitacin which is a powerful anti-inflammatory that helps to prevent diseases including arthritis. And because inflammation is the root cause of cardiovascular disease this means that Winter Squash can make a difference by curtailing cardiovascular disease.
