Here is a great Plant Based Whole Foods rice dish that will get you up and going and fill your body with lots of great nutrients that are healing… and it’s simple to make.
I made this for a party the other night and it was a hit… in fact it was gone in no time.

Ingredients:
4 – Cups of Brown Basmati Rice cooked in Low Sodium Veggie Stock with some ground Annato Seed (Achiote Seed) for that nice red yellow color. Annato Seed is what some call poor man’s saffron. – Wonderful! Or you can use a little saffron instead.
1 3/4 – Cups of Slightly Salted Cashew Nuts – Cashews Taste Best with a little Sea Salt – reserve 1/2 cup of the nuts for the topping.
2 – Cups of any kind of finely chopped green veggie that you like, such as kale, cabbage, turnip greens, spinach, or napa cabbage.
3 – 1 Cups of Fresh or Dry Moringa Leaves
1 – Large Red Bell Pepper Finely Chopped
1 – Tablespoon of Ground Annato Seed (Achiote Seed)
*Optional – And if you like garlic you could add some garlic in the cooking of the rice.
Salt and Pepper to Taste – Use salt sparingly… you have salt in the cashews
Cook basmati brown rice in veggie stock and ground annato seed or you can use a little saffron. When ready pour the rice into a serving platter and add chopped greens, 1 cup of the cashews, moringa leaves, chopped bell pepper, and then salt and pepper to taste. Garnish with a 1/2 cup of cashews on the top. Want more cashew flavor then add another cup of cashes to your dish. Since most people will only take a 1/2 cup of this rice as a serving… it’s a very nutrient dense dish with lots of plant based fats that do your body good.
Red bell peppers are full of Vitamin C which prevent cancer, flues, and colds. They also contain capsaicin which lowers cholesterol and blood sugar and helps with inflammation and pain. Plus they boost your immune system, and help your skin stay young looking.
Brown Rice – Brown Rice compared to White Rice has a lot of health benefits. Brown Rice is full of Thiamine, Niacin, Pyridoxine, Vitamin K, Calcium, Iron, Phosphorus, and Potassium. Brown Rice is rich in fiber, controls blood sugar and cholesterol, and works wonders for ulcers and diarrhea. Plus if you are debilitated it’s very easy to digest and contains needed nutrients for your bones, muscles, nails, hair, and teeth. Soak your Brown Rice in water for 30 minutes prior to cooking and it will cook faster.
Moringa – Moringa is full of great amino acids, vitamins, and minerals… and Moringa contains more that 4 times the amount of beta-carotene found in carrots, lots more Vitamin C than what you find in oranges. It also contains 2 to 3 times the amount of protein found in many dairy products. Full of calcium, and more than 7 times the potassium found in bananas. Moringa also has lots of zinc, which is great for boosting the immune system thus preventing colds.
Greens are full of wonderful B Vitamins that you need every day, they are water soluble and are excreted through your urine… so you need to get lots of “Live B Vitamins” every day. Greens prevent heart attacks by containing lots of Vitamin K that prevent platelets from sticking together thus preventing heart attacks. Greens also alkalized your body helping to prevent inflammation and thus helping to prevent cardiovascular disease, strokes, arthritis, immune disease and lots of other debilitating diseases.
Cashews are cholesterol free and actually lower LDL or bad cholesterol are full of lots of great Omega Oils that lower blood pressure and help with opening up arteries. And cashews are full of argenine that make vessels stronger and more flexible, at the same time prevents atherosclerosis and the build of of plaques in your arteries. They also contain lots of magnesium and for lowering blood pressure and relaxing, and potassium for cardiovascular health and water regulation, and even some Vitamin E which is an important antioxidant. Plus fiber for colon health and for providing a good environment for probiotic bacteria to grow and thus you have better health.
