Here is a quick and simple lunch or dinner that is full of great nutrition and will keep your body vital and alive.
This Whole Foods/Plant Based recipe will sooth your soul on those cool fall and winter nights when you wish you had a great tasting comfort food.
4 – Cups of Organic Split Orange Lentils
3 – Cups of Sliced Organic Carrots
5 – Cups of Peeled and Sliced Chinese Wild Yam or you could use Organic Potatoes instead or any other root veggie.
1 – Large Organic Onion Chopped
4 – Cups of Organic Celery Chopped
1/2 – Cup of Fresh or Dried Moringa Leaves – To sprinkle on the top of each serving
1 – Tablespoon of Annatto Seed Powder (Annatto is full of great antioxidants and gives the soup a nice red/yellow color)
Enough Low Sodium or No Sodium Veggie Stock to Cover all Veggies
Spray cooking oil – just enough to cover the bottom of the pot
Spray the bottom of your large soup pot with spray oil… use sparingly… and then saute your onions until translucent.
Now add all the rest of the ingredients except the Moringa. Add veggie stock and cook until everything is tender… and if you want a thicker soup cook a little longer.
Then cool slightly and serve with Moringa Leaves as the garnish.
This dish freezes well for later use… when you don’t feel like cooking.
