Even now some parts of the world are having heat waves, and we just don’t feel like eating something hot. But this cool curried cucumber salad will sooth the soul and cool the body. It’s quick and easy and it’s full of protein and has lots of great flavor. Great for lunch and dinner… this salad is packed full of nutrients and will do the body good… and lots of turmeric for healing.
4 – Large organic cucumbers chopped
1 – Large organic bell pepper – red, yellow, or orange in color – chopped
1 – Cup of cooked organic garbanzo beans
1 – Cup of fresh organic spinach cut into long strips
1 – Cup of extra firm organic tofu cut into cubes
1/2 – Cup of organic almonds
3 – Tablespoons of organic yellow mustard
1 – Tablespoon of organic curry powder
1/2 – Teaspoon of organic garlic powder
1/4 – Teaspoon of sea salt
Just a little bit of honey or stevia to sweeten the dish
(Optional) – A dash of red pepper sauce if you like it a bit spicier
Mix all the ingredients together and serve – very easy
This recipe will feed 4 people or 2 that are really hungry.
Turmeric grows in the tropics and has been used in India (Found in Curry Powder and Mustard) for over 2000 years.
