“Enjoy this Great Tasting, Sugar Free, Vegan, Low Glycemic Index, Gluten Free… Berry Pastry”
Here is a great tasting organic berry pastry that will do the body good. It has a low glycemic index and it’s sugar free, gluten free, it’s vegan, and full of great tasting berries that will create vitality and health. Plus this recipe is so simple that even a youngster could make it with a little help.
1 – 24 oz package of organic gluten free baking mix – this can be found at any health food store.
6 – Tablespoons of organic vanilla extract.
3 1/2 – Cups of filtered water
1/2 – Cup of yuca or tapioca powder – This is the egg replacement powder, and it can be found at any health food store.
1 – Teaspoon of ground organic cinnamon.
1 1/2 – Cups of organic agave nectar – (Reserve a 1/2 cup for the topping)
4 – Cups of organic mixed berries – fresh or frozen.
1 – 17 inch cast iron frying pan… or any heavy 17 inch frying pan. Spray the pan with a little organic spray oil of your choice to keep the pastry from sticking to the pan.
(Optional) – add a 1/2 teaspoon of stevia to the batter for a little extra sweetness.
Mix all the ingredients (except the berries and a 1/2 cup of the agave nectar) in a large mixing bowel and make a sooth batter. Then pour the batter into a oil sprayed frying pan, and next pour the berries on top in the middle of the pan. Then pop the pan into a preheated oven at 400 degrees for 45 minutes or until nice and golden brown… and the berry mixture is bubbling on the sides of the pan.
Remove the pan from the oven and let cool completely and then pour on… or brush on… the reserved 1/2 cup of agave nectar over the whole pastry.
Slice and Enjoy!
This great tasting desert is wonderful warm or cold, and people will come back for seconds.
Agave Nectar is a great way to have a little sweet in your life without chemicals and it has a low glycemic index meaning it will not increase your blood sugar as much as sugar. It also has other benefits such as containing Inulin which can lower cholesterol and reduce the risk of cancer. Agave Nectar also is anti-inflammatory, anti-bacterial, and also boosts your immune system. But it does contain calories so it must be consumed in moderation.
Berries are full of great antioxidants that help to prevent and heal DNA damage and thus slow the aging process.
Vanilla is wonderful anti-inflammatory, helps with coughs, it’s a powerful antioxidant, helps sooth away nausea and digestive disorders, and it’s great for improving our mood and soothing away anxiety.
