Here is a great tasting and easy to make recipe that’s a classic with a healthy twist. Cabbage has so many great health benefits from healing gastric ulcers to improving digestion and getting rid of excess water weight. And cabbage is inexpensive and can be found all over the world.
8 – Large Organic Cabbage Leaves
2 – Large Organic Eggplant – Chopped and Cooked
5 – Large Organic Potatoes or Taro Roots or 1 Pound of Malanga Root – Chopped and Cooked – If taro root is used this recipe has a very low glycemic index
12 – Oz of Organic Black Olives – Cut in Half
1- Large Organic Red Bell Pepper – Chopped and Cooked
1- Large Organic Yellow Onion – Chopped
8 – Large Organic Garlic Cloves – Minced
4 – Tablespoons of Organic Tomato Paste
1 – Tablespoon of Organic Dried Garlic Powder
3- Tablespoons of Organic Italian Seasoning
1 – Tablespoon of Organic Mild Chili Powder
A little bit of organic spray olive oil
Salt and Pepper to Taste
(Optional) – A Little Organic Hot Pepper Sauce
Sauté the onions and garlic in a pan sprayed with a little bit of organic olive oil. The add cooked eggplant, cooked red bell pepper, the cooked root veggies, olives, Italian seasoning, tomato paste, chili powder, garlic powder, salt and pepper and mix together into a thick seasoned mixture for the filling.
Now take the raw cabbage leaves and open them up and place 2 tablespoons or so of the filling mixture in the middle of the leaves. Then fold over the sides of the leaf, then fold up the bottom and fold down the top of the leaf and lay them seam side down in a baking pan. Add a little bit of water to the pan containing the stuffed cabbage leaves and cover with foil and bake in a 375 degree oven for 45 minutes or until the cabbage leaves are tender.
Alternative method is to place the stuffed cabbage leaves in a pressure cooker with a little bit of water at the bottom and pressure cook for 20 minutes.
Remove from the pan and allow to cool slightly and serve.
Make 8 to 12 servings
