“Full of Anti-inflammatory and Omega 3 Compounds”
Here is a fantastic vegan dish that’s really tasty and super easy to make. This dish is full of antioxidants, anti-inflammatory agents, and Omega 3 compounds and will keep a person feeling fantastic. And this recipe is sure to please everyone in the family. And served with a nice green salad this is a full spectrum food that’s great for the body.
6 – Cups of Organic Yellow Squash Chopped
4 – Cups of Organic Potatoes Chopped
2 1/2 – Cups of Organic Sun Dried Tomatoes Chopped
1 – Large Organic Yellow Onion Chopped
1 – Cup of Organic Parsley Chopped
12 – Cloves of Organic Garlic Chopped
1 – Tablespoon of Organic Olive Oil
1 – Tablespoon of Organic Ground Sage
1 – Tablespoon of Organic Garlic Powder
1/3 – Teaspoon of Organic Stevia Powder or 1 – Tablespoon of Organic Honey
1 – Cup of Filtered Water
Salt and Pepper to Taste
(Optional) – 2 – Tablespoons of Organic Balsamic Vinegar
(Optional) – A Dash of Hot Pepper Sauce
Take a large 17 inch cast iron fry pan or any other heavy pan and add the oil and sauté the onions and garlic. Then add the squash, potatoes, parsley, and sun dried tomatoes and keep sautéing until things start to brown. And before things start to stick add a cup of water around the outer edge of the pan and allow everything to start to bubble. Then add the rest of the ingredients and cook slightly longer and mix well and salt and pepper to taste.
Serve over brown rice, or whole grain pasta, or my favorite over some nice greens like wilted kale or turnip greens. And also serve with a nice green salad on the side for a whole spectrum meal that’s really great for the body.
Serves 12 people – or 2 big guys that just came back from camping and are really hungry.
