Here is a great tasting whole foods/plant based dish that only takes 30 minutes to put together and will do your body good – It tastes fantastic!

Made with whole plant “Jerusalem Artichoke Pasta” this wonderful pasta dish is gluten free, vegan, low sodium, and a glow glycemic index food that’s full of lots of nutrients.
Ingredients:
1 – 10 oz package of Jerusalem Artichoke Lasagna Noodles – Boiled and Ready to Use
1- 1000 gram jar of Low Sodium and Low Fat Marinara Sauce.
1 – Onion – Chopped Fine
8 – Large Gluten Free Crackers of Any Kind – Crushed
10 – Stalks of Asparagus – Chopped Fine
2 – Large Red Bell Peppers – Chopped Fine
1 – Package of prepared ground soy meat.
1 – Large Tomato Sliced
1 – Package of Extra Firm Tofu – Mashed Fine
15 – Cloves of Garlic – Minced – Cut into three portions
2 – Tablespoons of Old Bay Seasoning – Low Sodium if you can find it.
1/2 – Cup of Sodium Free Italian Seasoning
4 – Tablespoons of Nutritional Yeast
1 – 9” x 14” deep glass or metal pan
Take the asparagus and red bell peppers and saute them in a all natural ceramic none stick pan with 1/2 the garlic… and put aside.
Now put the soy meat in a bowl and add old bay seasoning and 1/3 the minced garlic and the italian seasoning.
Now add that mixture to the bottom of the 9 x 14 pan, then add a layer of sliced tomatoes and pour on 1/2 the pasta sauce.
Now layer on top the tomatoes a nice layer of the pasta, it should take three to cover the whole pan.
Next take the tofu and add 1/3rd of the minced garlic and mix well… then put mixture in the pan in a nice flat layer… and then add another layer of pasta.
Now add the asparagus and bell peppers with garlic as the next layer, and then add another layer of pasta on top of the asparagus.
Next pour the rest of the sauce on and distribute evenly.
Now take the crushed crackers and onions and place them on top the pasta and sprinkle with nutritional yeast for a great looking topping.
Bake in a preheated oven set at 400 degrees for 1 hour.
Let cool for 20 minutes and you are ready to serve.
This dish is full of great tasting antioxidants from all the italian seasoning, onions regulate blood sugar and are full of vitamin C, Nutritional Yeast is packed full of lots of nutrients so many that it would be hard to cover here, Garlic will boost your immune system, asparagus is a great diuretic, bell peppers fight cancer and are full of antioxidants, tomatoes are full of vitamins A, C, and E. Soy is full of lots of protein, Jerusalem Artichoke is a low glycemic index food and also is full of Inulin which helps lower blood sugar.
