
This great tasting soup is packed full of vitamins, minerals, betacarotene, and lots of fiber. And it’s simple to make and tastes great, and this soup will become one of your favorite dishes.
Ingredients:
6 Cups of Pumpkin Peeled and Ruff Cut – You could also use Butternut Squash, Acorn Squash or any other yellow hard squash in place of Pumpkin.
2 Large Taro Roots peeled and cut into cubes
4 Medium Potatoes of any kind with the skins on cubed
1 Cube of Vegetable Bouillon Seasoning – Low Sodium, or substitute 1/2 the water for low sodium veggie stock.
8 Garlic Cloves Minced
Salt and Pepper to Taste
And Enough Water to cover all the veggies
Add the water, pumpkin, taro, potatoes and veggie bouillon, and garlic to the large pot and bring to a boil… and let boil until the everything is fork tender.
Turn off the heat and take an immersion blender and puree everything into a beautiful soup. Next add salt and pepper to taste… go easy on the salt. Let cool slightly and you have a great tasting meal that will keep in the frig for a week, and it can be packaged individually and frozen for later use.
From the Pumpkin you are getting lots of Vitamin A a powerful antioxidant, zeaxanthin for the eyes, B Vitamins for vitality, phosphorus, calcium, copper, potassium, and betacarotene a great antioxidant.
Taro is a low glycemic index food, with lots of Vitamins A, C, B’s, E, and K, betacarotene, manganese, magnesium, copper, selenium, zinc, and a good amount of protein too. And you can buy Taro Root in lots of markets now because Taro is a very good low glycemic index food (That means it breaks down into sugars slowly making it great for weight loss, and for anyone with blood sugar challenges)… or you find taro root at your local Asian Market.
And potatoes with the skin on contain fiber, vitamin C, potassium, and over 50 different plant based chemicals that help with blood pressure, heart disease, stress, and even colon health.
