Here is a super simple casserole that anyone can make in 20 minutes that will do your body good and tastes wonderful and it’s very filling. If you don’t feel like cooking tonight make this casserole ahead of time and freeze it for later use. Full of the nutritional goodness of chickpeas and lots of garlicky potatoes and the health benefits of kale. I went back for seconds… and I’m sure you will too! This is a full spectrum meal.
Another Whole-Foods Plant-Based Recipe
12 – Oz of Organic Cooked Chickpeas also known as Garbanzo Beans
4 – Cups of Cooked Organic Potatoes – Mashed with the skins on—lots of vitamins in the skins.
1 – Large Organic Red Bell Pepper – Chopped
1 – Cup of Organic Kale – Chopped very fine
1 1/2 – Tablespoons of Organic Garlic Powder
6 – Cloves of Organic Garlic – Minced
Salt and Pepper to Taste
(Optional) You can also add hot sauce if you like
(Optional) You can also add Italian Seasoning if you like
Take the cooked potatoes and mash them, add everything else and mix well. Then place in a loaf pan and bake at 400-degrees for 45 minutes or until it browns on top.
Garnish with some greens of your choice
Serves 3 to 4 people
